Dr. Ralf Jäger, FISSN, CISSN, MBA

Dr. Jäger is a world-class inventor of functional foods and dietary supplements, as well as an award-winning speaker in these subject areas. He has developed many new products that currently lead the market in the supplement and food industry, as well as having designed and conducted clinical studies on prominent ingredients and respected products. He has authored and published numerous peer-reviewed scientific papers, industry publications and mainstream media articles, on sports nutrition, brain, joint, heart, and gut health, and is a leading expert in the field of probiotics.
 
A postdoctoral scholar in bio-organic chemistry at the California Institute of Technology (Caltech) in Pasadena, Calif., Dr. Jäger originally earned his Ph.D. in organic chemistry from the University of Bonn in Germany. He began his scientific career developing new bio-active ingredients for a leading multi-national billion dollar company and advanced in his career from director of research and development to vice president of marketing and sales. In addition, he holds an MBA from the University of Wurzburg, Germany, and was acting global business manager of Functional Foods prior to becoming a co-founding partner of the global consulting firm Increnovo LLC based in Milwaukee, WI, USA.
 
Dr. Jäger is a certified sports nutritionist (CISSN), a Fellow of the International Society of Sports Nutrition (FISSN), and the co-editor and editorial board member of the leading scientific sports nutrition journal JISSN. He is currently a member of numerous scientific associations, including, most notably, the American Gastroenterological Association (AGA).

Justin Shimek
Chief Technology Officer and Executive Vice President of Product Development at Mattson & Co.

Justin Shimek is Chief Technology Officer and Executive Vice President of Product Development at Mattson & Co., an independent developer of food and beverage products. As the company’s senior technical leader, he is responsible for the overall technical quality of concepts, products, and commercialization activity.  He also guides Mattson’s vibrant technical community of cross-trained food technologists and chefs, and commercialization experts. 

Prior to joining Mattson, Justin held a number of product and process development positions across the food industry.  Most recently, he directed new vegetable product development and process technology research at Del Monte Foods.  While at E. & J. Gallo Winery he led major applied technology programs in the world’s largest winery to significantly reduce cost while maintaining product quality.  Justin began his career developing ready-to-eat breakfast cereals at General Mills, Inc.   Additionally, as part of Cereal Partners Worldwide – a General Mills’ Joint Venture with Nestlé − he developed new products in addition to leading nutritional renovation efforts across the cereal portfolio in Latin America.

Justin earned a Ph.D. in food science from the University of California, Davis and Bachelors of Science degrees in both food science and nutrition at the University of Minnesota.  His work has led to a number of patents and technical publications.  Currently, Justin serves on the UC Davis Department of Food Science & Technology Leadership Advisory Board.

Justin has been an active member of the Institute of Food Technologists since 1994 and served as a volunteer leader in a variety of roles, including on the IFT Board of Directors. He currently serves on the Board of Trustees of IFT’s non-profit foundation, Feeding Tomorrow.

Seminar panelist Dr. Douglas Kalman

Dr. Douglas Kalman
Director of Sports Nutrition at Florida International University

Dr. Kalman has been involved in over 200 clinical trials and projects within the pharmaceutical, medical and exercise - nutrition fields. He has published over 75 abstracts and more than 30 peer-reviewed manuscripts. He is also a Co-Editor of one journal (JISSN) and on the Editorial Board of three Scientific Journals.

Dr. Kalman received his undergraduate degree from Florida State University, Masters Degree from Hunter College - City University of New York and Doctorate in exercise and nutritional biochemistry (Health Research) from Touro University International. He is an Active Member and or Spokesperson with many organizations (ISSN, NSCA, APS, ACSM, etc.) and a co-founder of The International Society of Sports Nutrition (www.theissn.org). He has worked with Olympic Athlete’s (Nagano, Japan, Salt Lake City, UT, Torino, Italy and England and the upcoming 2016 Rio games) for Winter and Summer sports, professional athletes (i.e., MLB, NFL, NBA), musicians and music groups, combat sports (UFC-MMA), collegiate athletes and teams as well as Nike’s Elite Distance Racing Team (Oregon Project) and the general population. Dr. Kalman has edited four academic textbooks, contributed to more than five academic textbooks as well as two “popular press” books. He has been interviewed on various media outlets such as NBC, MSNBC, CBS Evening News, CNN, Discovery Channel plus others along with a host of radio shows.

Dr. Kalman is an Adjunct Professor teaching Graduate Sports Nutrition in the Robert Stempel School of Public Health at Florida International University (FIU), Miami, Florida. He has been the Nutrition Program Consultant for IMG Academies in Bradenton, Florida (www.imgworld.com) and is currently the Blackzilians Nutritionist and Physiologist in addition to serving as the Team Nutritionist for Coral Springs Aquatic Center and a nutrition consultant to the United States Tennis Association - Player Development Program (USTA). He has taught at New York University, C.W. Post-Long Island University and Florida Atlantic University. In addition to the aforementioned, Dr. Kalman is the Sports Nutritionist for the FIU Athletic Department, a Division I competitor with 18 fielded teams (www.fiusports.com).

Michael Bush

Michael directs all sales, marketing and strategic business development activities for Ganeden.  He has worked in the healthcare, biotech and bioinformatics arenas and has over 20 years of experience in business, including founding a national business growth consultancy firm, co-founding a national biomedical services firm and leading acquisitions and merger activities for a global medical services company. Michael also serves as a member of the executive board and is Vice President of the International Probiotics Association.

Michael has received numerous awards for his business leadership, including being named one of Crain’s Cleveland Business 40 Most Influential People Under 40, was a four time Weatherhead 100 winner and has been awarded two innovation awards.  Michael sits on the boards of several for and not-for profit organizations and is active in regional economic development and entrepreneurial education initiatives.  He holds degrees in Biomedical Technology and Business Administration.
